Ingredients for Cooking Artichoke Pancakes

For pancakes:

  1. Flour (wheat) 120-150 gr.
  2. Chicken egg 1-2 pcs.
  3. Milk (3.5%) 300-350 ml.
  4. Salt pinch

For filling:

  1. Artichokes 450 gr.
  2. Leek 1 pc.
  3. Cheese (any grade) 100 gr.
  4. Chicken eggs - 2 pcs. taste
  5. Flour (wheat) 2 tablespoons
  6. Cream (22%) 2 tablespoons
  7. Parsley to taste
  8. Butter 50 gr.
  9. Salt to taste
  10. Black pepper, ground to taste

Cooking pancakes stuffed with artichokes:

Step 1: Cooking Pancakes.

In a shallow bowl, beat the eggs with salt with a whisk, then gradually pour the wheat flour, continue to beat until a homogeneous, viscous mass is formed. After that, pour in the milk and mix everything thoroughly. We put a frying pan on medium heat, lightly grease it with vegetable oil and start frying pancakes on both sides.

Step 2: Prepare the filling.

Rinse the leek well and chop finely. Artichokes can be used and canned, but I bought already peeled and frozen. Therefore, I set in advance to defrost them. Grate cheese (I have Russian) on a coarse grater. We put a small saucepan on medium heat, add a piece of butter and put out the artichoke with leek. Stew, stirring constantly until they become soft (about 12 minutes). Toward the end of cooking, you need to knead them until a homogeneous mass is formed and add a little salt and pepper. Add the flour, mix thoroughly and simmer for about a minute. Remove from heat, add cream, finely chopped parsley and cheese, mix and leave to cool to a warm state. Then add the egg yolks and mix. Beat the whites in a shallow bowl with a whisk until airy foam forms, and add them to the filling.

Step 3: Cooking pancakes stuffed with artichokes.

Set to preheat the oven to a temperature of 180 degrees. Take a pancake and fold it in half. The result should be 4 cells, in one of which we put the filling. So we stuff all the pancakes. Cover the baking sheet with parchment paper and put stuffed pancakes. Put in a preheated oven, approximately, for 10-15 minutesuntil the pancakes are lightly browned.

Step 4: Serve the pancakes stuffed with artichokes.

After 15 minutes we take the pancakes out of the oven and serve right away! Enjoy your meal!

Recipe Tips:
