Dough "Filo"


Ingredients for the preparation of dough "Filo"

Preparation of the test "Filo":

Step 1: Cook the dough.

Sift the necessary amount of flour on the working surface of the table, through a fine sieve, in the form of a slide. In the center of the slide do small depression. Then, inside the recess, add the chicken egg, vegetable oil, vinegar. Then pour in about 0.5 cup water. Gently start kneading the dough. Gradually add the remaining water to the dough. Knead the dough well until smooth. It should turn out quite steep and not stick to your hands.

Step 2: Put the dough in the refrigerator and then chop it.

Roll the finished dough into a lump and place it in a tight plastic bag. Then put it in the refrigerator for about 30-40 minutes. After that, take out the dough and roll a large sausage out of it. Cut it into medium pieces.

Step 3: Roll out the dough.

Now sprinkle the working surface of the table with flour a little and roll each piece for a long, long time until it becomes transparent. Be careful, try to make the dough anywhere not torn. There is another option using corn starch. To do this, divide a piece of dough into 3, approximately the same cakes, roll them a little. Then each of them plentifully sprinkle with corn starch and stack on top of each other. Then start rolling all three at the same time. As a result, this dough will turn out even thinner.

Step 4: Serve the Filo Dough.

When the dough is ready, you can start cooking various delicious dishes from it. The main thing is not to leave it too long in the open air, otherwise it will harden and dry out. It is best to place the layers of dough in the refrigerator, at least 8 hours, and 2 hours before preparing meals from it, it is advisable to remove it from the cold and heat at room temperature. - - The Filo dough is well stored in the refrigerator if it is placed in a sealed container. You can store it even in the freezer.

- - Such a dough can be found frozen and chilled, in any store. The size of the dough sheets most often depends on its manufacturer, but for many recipes, if necessary, the sheets can be tucked or cut to fit the size of the mold.

- - The sheets of such a test contain much less fat than in all other types of test. When preparing dishes from this dough, grease each layer with melted and cooled butter or olive oil. In this case, the pastries will be incredibly crispy and delicious.

- - If you want to use the dough immediately after making it, then leave it to lie down and infuse, but not more than 1 hour.

- - Apple cider vinegar can be replaced with wine or lemon juice if necessary.
