  • caramel sauce (1 tablespoon water, 1 tablespoon lemon juice, 70 grams of sugar)

Method of preparation:

Put the egg whites and salt powder in a bowl and mix until you get a frothy texture. Add the sugar and continue mixing (with the whisk or the mixer) until you get a hard and shiny white foam.

Put the milk in a saucepan, along with the vanilla sugar / vanilla seeds / vanilla extract. Bring to a boil and simmer.

Take a spoonful of egg white foam and form small lumps, which you let slip in the hot milk. Let the egg whites boil for 2-3 minutes on each side.

Remove the lumps on a flat platter, using a whisk, and let them cool well, then refrigerate.

Meanwhile, strain the milk in which the Bulgarians boiled and make up to 500 milliliters. Now you will make the vanilla sauce!

Put the milk on the fire again. While the milk is heating, mix the 6 egg yolks with the sugar in a bowl. Pour warm milk (not hot - otherwise the egg will coagulate) over the yolk mixture and mix well.

Pour the mixture of milk and yolks back into the pan, turn on low heat and leave until the sauce thickens (5-10 minutes, stirring occasionally).

Take the pan off the heat and strain the sauce into a bowl, through a sieve, so that it does not remain lumpy. Cover the bowl with vanilla sauce with cling film and allow to cool, then refrigerate.

Now is the time for decoration! You can make caramel sauce, grate chocolate or put almond flakes on white lumps. Or all at once, it depends on how many calories from the "daily budget" you are going to sacrifice.

The caramel sauce is prepared very simply: put a pan on the fire, a tablespoon of water, a tablespoon of lemon juice and 70 grams of sugar. Let it simmer and stir until the sugar melts completely and acquires a beautiful copper color.

Take the vanilla sauce and the lumps out of the fridge. With a polish, put vanilla sauce in a glass or bowl and 2-3 floating lumps. On top, garnish with caramel sauce, grated chocolate and almond flakes.
