This simple pancake is similar to drop scones or American-style pancakes but made in a fraction of the time and with the most fabulous, rich strawberry topping. Delicious!

  • 100g self-raising flour
  • 1 tsp baking powder
  • 1 tsp caster sugar
  • 1 egg
  • 1 tsp pure vanilla extract (optional)
  • 100ml semi-skimmed milk
  • 20g unsalted butter
  • 400g strawberries, hulled and halved
  • 1/2 tsp ground cinnamon
  • 3 tbsp granulated sugar
  • mint sprigs, to decorate (optional)

  1. Make the batter: Mix the flour, baking powder and caster sugar in a bowl. Make a well in the middle and add the egg and vanilla extract, if using. Pour in a little of the milk, then beat the egg lightly until it is mixed with the milk and vanilla. Gradually stir in the flour mixture and pour in the remaining milk a little at a time. Before all the milk is added and while the mixture is quite thick, beat well to remove all the lumps, then gradually beat in the remaining milk to make a smooth batter.
  2. Cook the pancake: Preheat the grill to the hottest setting. On the hob, melt the butter in a 20-22cm frying pan that can safely be used under the grill (cover a wooden handle with foil). Swirl the butter around the pan, then pour in the batter and cook over a medium heat until the pancake is golden underneath. The batter should have risen and almost set on top. The surface will break into little bubbles.
  3. Finish under the grill: Slide the frying pan under the grill and cook for 1 minute. Scatter the strawberries evenly over the pancake. Sprinkle with the cinnamon and sugar, then grill for 3 minutes or until the sugar has melted. Cut into four wedges, decorate with mint, if you like, and serve immediately.

*Instead of making batter, use bought pancakes. Heat 4 large pancakes, one at a time, in a little melted unsalted butter in the frying pan for about 30 seconds each or according to the pack instructions, then fold each one into four. Put all 4 pancakes back in the pan, add the strawberries, cinnamon and sugar for the basic recipe (use caster sugar, as it melts quickly) and grill for about 1 minute. *For strawberries, use raspberries, blueberries or blackberries.

Ricotta and raspberry pancake stack: Preheat the oven to 200°C (180°C fan oven), gas 6. Cover a baking tray with foil and grease it with a little butter. Beat 250g ricotta cheese with 3 tbsp icing sugar and the grated zest of 1 lemon. Have 340g frozen raspberries ready. From a pack of bought pancakes, lay one pancake on the foil and spread with a third of the ricotta, then sprinkle with a third of the raspberries. Repeat twice more, then top with a pancake. Dot the top with unsalted butter and dust with a little icing sugar. Bake for 15 minutes or until the sugar and butter have glazed the top and the raspberries have thawed. Cut into wedges to serve. *Banana pancakes with fudge sauce: Roughly chop 2 x 54g Mars Bars (or chocolate-caramel bars), then put into a heatproof bowl with 100ml single cream. Set over a pan of gently simmering water and stir until melted into a smooth sauce. Heat 4 large bought pancakes in a frying pan (see Swaps above). Slice 4 bananas and divide among the pancakes. Fold into quarters and drizzle over the sauce. (Thinly sliced apple also works well in this recipe.)

I only used about half the amount of strawberries, and it was still very tasty! I love how the strawberries and cinnamon sugar kind of make their own syrup on top of the pancake. This was delicious, and we had it as part of our "breakfast for dinner" tonight!-19 Feb 2015

Step-by-step

  1. Beat together the butter, cinnamon and sugar. Dollop it into a saucepan and melt over a medium heat. When the butter starts to froth add the strawberries, toss well in the butter and turn off the heat.
  2. Whisk together the flour, baking powder, egg, and milk until smooth. Heat a heavy based, non-stick frying pan or bake stone and grease with a little oil. Pour small amounts of batter into the frying pan (about 2 tbsp per pancake), once the top has bubbled and dried flip the pancake and cook the other side till golden. Keep warm whilst you make the rest of the batter.
  3. Reheat the strawberries gently while you arrange the pancakes. Place a pancake on each serving plate and spread with mascarpone then arrange some sliced strawberries on top. Repeat this layering until all the pancakes are used up. Top the stack with any remaining strawberry slices and drizzle over the melted cinnamon butter.

It’s been a while since I’ve shared some pancake recipes with you.

But, before we get to that, let’s talk about breakfast. Are you a grab ‘n go sorta person? Do you need your cereal, eggs, or smoothie in the mornings? Or do you just kinda wing it?

I’ve mentioned this before, but I don’t always have the best habits when it comes to breakfast. My go-to meal is usually some coffee and yogurt, followed by a smoothie or overnight oats later on. But, I do love making breakfast on the weekend. And since the hubster religiously eats breakfast every morning, I thought a make-ahead dish that could serve as breakfast during the week would definitely help me to get into the same habit as the hubster.

I really do love breakfast. It’s my favorite meal of the day and I love having breakfast for dinner (or brinner). And when I can make a dish, such as this french toast bake, that baked oatmeal, or these overnight oats and have breakfast already prepared for the followed morning, it gets my day off to a great start.

Then, I really have no excuse as to not having a hearty breakfast, right?

When I was shopping at Meijer last week, I stumbled upon three products that would make a wholesome breakfast for the hubster andI. Strawberry Cinnamon Dutch Baby Pancake

S unday was Father’s Day, as you probably remember, and we spent what was easily the hottest day of the year so far poolside with family.

It was a slow morning before all that, though, and the kids coloured handmade cards for Danny while I whipped up one of his favourite breakfasts – a Dutch Baby. This quick treat also goes by a Bismark, puff pancake or a German pancake and can be likened to a sweet Yorkshire pudding.

It’s long been Danny’s ‘special’ breakfast request, accompanied by seasonal fruit like sautéed apples in fall and sliced peaches in August. Of course, it being strawberry season, I had a flat of berries sitting on the counter, ready for slicing.

Quickly, quickly, before the pancake deflated, I snapped a photo and uploaded it to Instagram. Then a food photographer I admire complemented me on the lighting in the image, and, well, her kind comment went straight to my head. I had to share the photo with you, even though it’s just a fast iPhone snap.

And since I have yet to post my Dutch Baby recipe here on the blog, the timing couldn’t be better. It’s a busy sort of week, with school wrapping up, a provincial holiday, oodles of gardening chores and appointments galore. Keeping this one short and sweet suits me fine.

So with sliced strawberries and a dusting of powdered sugar, here is my recipe for a classic Dutch Baby. Make this baked pancake sooner rather than later, because it’s an ideal way to showcase summer fruit.
